Candy Covered Stroopwafel's

Updated: Feb 23, 2022

I am taking full credit for the Stroopwafel craze to hit America in late 2019 – whether I deserve it or not.

When Jacob and I were in Amsterdam, we discovered Melly’s Stroopwafel’s right down the street from our hotel and our lives were changed forever. For the better. I honestly made myself sick the last day we were in city of canals by eating so many stroopwafels.

Hot out of the stroopy press, hot caramel smashed between two waffle cookies – covered in your chocolate of choice followed by 3 rows of whatever toppings you’d like. Do. Me. On. It!!

I could not be trusted in this place.

Read about our travels in Amsterdam here.

I bought a couple of small bags to bring back home and walked around work passing them out like a little stroopwafel fairy. No one complained.

If you don’t want to go through all the trouble of making these over-the-top stroopwafels, do as the Dutch do: pour yourself a hot cup of coffee, pop a stroopy on top til the center is soft and warm from the heat of your joe, and enjoy.

But, I highly recommend making these with your kids soon. Especially Valentine’s Day!

Tag us on Instagram if you make them so we can see what toppings you went with!
