These Blondie Brownies (with chocolate frosting) came out of cookbook from a restaurant we visited in NYC. Went for the burgers & pizzas, left with the need for their cookbook and this brownie recipe.
I remember this meal like it was yesterday (it was September 2018). We had the Emmy Burger, which is a thick, juicy burger on a pretzel bun with rich mayo, and a decadent Asian inspired sauce, covered in melty cheddar cheese. Topped with caramelized onions, this burger is surely a dream.
We also had the Colony pizza, Detroit-style. The Colony is a red sauce pizza, covered with cubes of mozzarella, lots of pepperoni, freshly grated pecorino Romano, pickled jalapenos and finished off with a drizzle of honey. To make this pizza even better, they served it Detroit style….. which means it’s a square, deep dish pizza with crispy fried cheese up to the edges of the crust. It’s delightful.
I highly recommend eating at EMILY’s though. They have 2 locations: we visited the one in the West Village and the other is in Brooklyn. Known on Instagram as @pizzalovesemily, EMILY’s is owned by a husband and wife duo. Matt, the chef, and Emily, the face of the operation.
I just snatched the cookbook a couple of weeks ago, and can’t wait to start slaying
these flavor-packed burgers and pizzas immediately. While I am somewhat intimated by the dough process of the buns and pizza, I am going to attempt soon. Stay tuned!
So anyways, I decided to make these “chunky blonde brownies” because the ingredients list is incredibly simple: butter, flour, baking powder, salt, sugar, brown sugar, eggs, vanilla, semisweet chocolate.
Speaking of chunky blondes, that’s how I’m going to be looking in my swimsuit this summer after a spring of quarantine. If we see each other in our outdoor apparel, let’s have a mutual understanding that an extra 10 pounds is acceptable. It’s almost welcomed.
BLONDIE BROWNIES
Ingredients:
1 ¾ C. sifted all-purpose flour
1 ½ t. baking powder
½ t. salt
½ c unsalted butter, room temp
¾ c sugar
¾ c light brown sugar
3 large eggs, room temp
1 ½ tsp. vanilla extract
6 oz. semisweet or dark chocolate bar, roughly chopped
1 jar chocolate frosting (optional)
Directions:
1. Preheat your oven to 350 degree and make sure a rack is positioned in the middle. Grease your shallow 9x13 pan, or line a regular 9x13 baking pan with parchment paper for easy removal.
2. Sift the flour, baking powder, and salt into one bowl.
3. Beat your butter with a hand mixer for about 1 minute until it becomes fluffy. Add in the sugars until it becomes creamy again. Add in the eggs, one at a time. Next, the vanilla.
4. Add the flour slowly until it’s combined. Roughly stir in the chocolate. Pour/spread into your pan evenly.
5. Bake for about 25 minutes. Let cool completely in the pan, then if using, spread frosting on top. Let frosting harden before cutting. Cut into bars and serve.
