For best scooping results, we love scoop-able tortilla chips or Fritos..
But you can use any vessel necessary to enjoy this dip, including just a spoon. I wouldn’t be telling the truth if I didn’t admit to eating this with a spoon straight out of the bowl every time I make it.
It’s also really damn good as a topping on tacos or nachos. Honestly, it’s just good. That’s it. Make it and let me know what you think!
Cowboy Caviar Bean Dip
Ingredients:
1 can black beans, drained & rinsed
1 can black eyed peas, drained & rinsed
1 can corn, drained & rinsed
1 can Rotel, drained
1 red onion, diced
1-2 red bell peppers, diced
1 Avocado, cut into cubes
1 small can black olives, optional
Marinade:
(you could marinate chicken in this!)
1/3 c. olive oil
1 lime, juiced
2 garlic cloves, minced
¼ c. cilantro, minced
1 T. raw honey (visit your local Farmers Market)
1 tsp. chili powder
1 tsp. cumin
1 tsp. kosher salt
Instructions:
1. Drain all of the canned ingredients and rinse the juice off. Add all ingredients to a bowl.
2. Mix all marinade ingredients in a mason jar. Shake well; pour on top of beans & veggies.
3. Mix thoroughly.
4. You can eat immediately, but the longer it can marinade the better!
