Easy, Homemade Ramen

This homemade ramen is quick, easy, and so much healthier than the store bought stuff that you’ll never buy it again.

I know it’s so ungodly cheap and it’s really tempting, but be strong. Those little packets are full of so-freaking-much sodium and msg. I’ll never forget in high school one of my friends told me his mom literally wouldn’t let them eat them and I thought that was child abuse.

But I get it, stay away from the .38 cent ramen. Your arteries will thank you.


Don’t be the .38 cent ramen. Be the homemade ramen.


Bonus that all these ingredients are easily found at Walmart, Target, or Amazon Prime in an absolute pinch.


To note, you can add more broth to yours if you want a more mild flavor, soup like ramen.


As with all foods, I want the umami slapping me across the face. I NEED the umami slap.

Saucier noodles for me please, less soupy. I don’t know the rules of Asian cooking whatsoever so please no one rake me over the coals for my renditions of some of my favorite takeout meals. This is just how I prefer to make them, eat them, and serve them to my family. You can throw this together after school almost as fast as the cheap stuff so, treat yo’self. Love yo’self. Be the homemade ramen.

And honestly while I’m thinking about it, this is more of a ramen stir fry because it is SO saucy, there’s nothing about this ramen that says “soup”. So, I apologize for misleading you this far…. these noods have the umami slap.

Quick & Easy Ramen


Ingredients:

1 tsp sesame oil (Walmart/Amazon/Target)

2 tsp grated ginger (hassle free ginger)

4 tsp grated garlic (hassle free garlic)

2 cups ramen broth (Walmart/Target)

1/4 C. soy sauce

1 T. light brown sugar

1 T. sambal oelek (optional)

1 T. cornstarch

1 package dry ramen noodles (my fave – Walmart) - or, use 3 packages of instant ramen noodles, discard flavor packets

½ c. slivered green onions or chives (optional)

Sriracha or hot chili oil, to taste



Directions:

1. Mix the sesame oil, ginger, garlic, ramen broth, soy sauce, samal oelek, brown sugar, and cornstarch in a bowl. Whisk together well.


2. Pour sauce into a medium skillet, frying pan or wok. Whatever you have is fine.


3. Heat the sauce over medium-high heat just until it begins to bubble, then reduce to a low shimmer until the sauce has thickened, 8-10 minutes.


4. Cook the packaged ramen according to the directions on the box. You can drain the noodles, or add them directly to the sauce to loosen it back up a little bit.


5. Top with a soft-boiled egg, hot chili oil, sriracha, and green onions or just eat them like they are!
