Mediterranean Rice Brunch Bowl

This healthy, super easy Mediterranean Rice Bowl is the perfect nutrient packed meal for breakfast, brunch, lunch, or just a little pick me up. I only titled this Brunch Bowl because #clickbait and #runnyegg

I mean, anything with a runny egg on it is food porn in my book.


But back to this bowl……

This bowl comes together in a snap because you will make and store my chermoula ahead of time, along with precooked and refrigerated soft-boiled eggs.


I mean if time allows, you could make your egg hot and fresh when you’re going to make this bowl:


Perfect Soft-Boiled Egg: -Bring a pot of water to a boil, and carefully drop your eggs in. -Set your timer for 6 to 7 minutes and immediately move to an ice bath to stop them from cooking any further.

-I set my timer for 6 minutes and start it when I slide the first egg into the water. When it goes off, I start scooping them out and this allows for my personal runny egg preference.


What else makes this simple, nutrient dense meal – so simple? 90 second rice.


I’m a huge connoisseur of quick ready rice and Uncle’s Ben has totally stepped their game up when it comes to variety. I only had a coconut jasmine rice left in my pantry which was perfect to as a sweet freshness to this bowl, but basmati would be perfect too. I love the long textures of these long grains. Brown rice is always a fine option too though.


I also load up on these cups at Walmart because Jacob and I will eat them with any meal that we don’t find filling enough.

I love Greek Yogurt because it’s high in protein and low in carbs. You could actually have tzatziki made ahead of time too and use that in place of plain Greek yogurt for even more flavor. If the Greek yogurt is weirding you out, swap it out for hummus or roasted chickpeas.


You can add more fresh veggies if you want. You can eat this bowl with a spoon or use pita or naan to shovel it into your mouth. Top with fresh cilantro, and there you have it. This is such an easy meal to throw together when you’re short on time. You can throw it all together too sans rice, then microwave the rice in the breakroom at lunch.

Mediterranean Brunch Bowl

Makes 2 bowls

Ingredients: 1 Uncle Ben’s Coconut Jasmine Rice ½ - 1 C. plain Greek yogurt (I love Stoneyfield – ¼ to ½ per serving) 2 soft boiled eggs Chermoula, a couple spoonful’s or to taste

Cilantro *optional Roasted chickpeas *optional but great source of protein & fiber


Directions: - Add rice to bowl, then yogurt, swirl in the chermoula and top with the egg, chickpeas & cilantro.
