Strawberries & Creme Waffle

This is Bode's favorite item on the Mulligan's Brunch menu (outstanding!) so of course I got busy recreating it for him.

I made it easy on myself with the waffles and used boxed mix since the strawberries require some work and I also made homemade whipped cream.

If you make your own homemade whipped cream, put your glass bowl and beaters in the freezer to chill before you start. It helps keep the whipped cream cold. Put it back in the fridge til you're ready to use it.


Also - I used Almas Culinary Co. waffle mix for Valentine's Day which is where the pink color came from. You could just put pink food coloring in your waffle mix you want to do the pink thing.

Strawberries & Creme Waffles

Ingredients: Boxed Waffle Mix


For the strawberries: 2 C. fresh, hulled strawberries 1 ½ T. cornstarch ½ C. sugar

For the whipped cream: 2 C. heavy cream 6 T. powdered sugar

Directions:

1. Beat heavy cream on high speed with an electric mixer until thickened. Slowly add sugar until soft peaks form. Put in fridge.


2. Add strawberries, sugar, and cornstarch to a heavy saucepan, toss to coat, and bring to a simmer over medium. Stirring constantly, lightly using your spoon to smash the strawberries. Cook for 1 minute or until thickened.


3. Spoon over prepared waffles & top with homemade whipped cream.
