I got to thinking about sharing a toast recipe with you all but I thought – that seems kind of boring and lame. But 3 toast recipes? That, I can get behind. Three sourdoughs are superior to one. Don’t care who ya are.

The beauty of these sexy little toasts is you can mix and match to find your favorite combination of toppings. Take or leave what you want.
All you need to make ahead of time is my easy pickled red onions and this simple arugula mix: good olive oil, a couple tablespoons of red wine vinegar, salt and pepper, and viola. You’re a chef. Maybe a cheap one, but you made it.

The Greek sans tomato
My Greek Salad isn’t the basic bitch of Greek Salads. I sub the tomato for a sweet red pepper because I truly do not like tomatoes. Sorry, not sorry.
Ingredients: 3 cucumbers, diced 1 red bell pepper, diced 1 sweet red pepper, diced 1 small red onion, diced ½ C. fresh parsley, chopped ¼ C. fresh mint, chopped ¼ C. fresh dill, chopped 1 lemon, juiced (zest it too if your zesty) ¼ C. good olive oil Cracked sea salt, to taste Basil paste, for spreading Freshly crumbled feta for the top
