Life Updates
I mean, do I even need to say it? Everyone is sick and the world is going to sh!t.
Just kidding, kind of. Everyone is sick, but I’m choosing to believe the world is on the rise. I’m speaking it into existence.

But really, last week the entire household was sick. Shoot, the entire town was sick. SHOOT! The entire 4-state area either had the flu or omicron. I hope we are getting a big wave of sickness out of the way so that way we can all start to carry on with life the way we want to. For Christs sake.
So last week, we just did the best we could with what we had. All of my kids’ basketball games were canceled and 2 of the 3 of them were throwing up. Mom life. It’s not for the faint of heart.
This week, we are staying healthy. Supposedly, we are going to have 4 nights of basketball games so I’ve got a meal plan lined up using leftovers in creative ways. I added several new recipes to the blog last week that you can find at the bottom of this blog post.

So without further ado, below you’ll find lists with my workout plan and dinner schedule for the week!
Meal Plan
Monday January 17th - Basketball Night Leftover Lasagna Crunchy Oat & Honey Bars (HBH pg. 26) – these are actually really easy and can be made gluten free very easily!
Tuesday January 18th Chili Cheese Dogs Last Saturday night I made my homemade chili and I froze the leftovers specifically for this meal.
Wednesday January 19th Honey Ginger Chicken Stir Fry (HBH Pg. 108)
*Was on last weeks meal plan but last week was a sh*t show
Thursday January 20th Basketball Night so slow cooker meal it is, this meal does require 30+ minutes of letting the beans cook before you eat. Slow Cooker Tuscan Beef & White Bean Ragu (HBH pg. 193)
Friday January 21st Al Pastor Style Beef Enchiladas (HBH Pg. 202)
Saturday January 22nd Roasted Garlic & Tomato Braised Pork Shanks (HBH Pg. 184)

Workout Plan
The entire household had some form of illness last week, on top of my neck and upper back being completely jacked – so last week’s workout schedule didn’t go as planned, yet I still got in some good workouts and found myself sore from a 10 minute lower body workout.
Today (Sunday 1/16) I had planned to just do a run and some yoga, but I was feeling pretty good after taking a lot of the week off and one of my favorite classes was starting live at 9am – “Thunder 45” - a 45 minute full body bootcamp with Adrian Williams. This class is classified as an advanced level, but you can taper them to your level of fitness obviously.
A bootcamp on the tread has you running, getting off the tread to do a strength segment on the floor, and back and forth as the instructor has programmed. Thunder 45 is always 6 total segment: 3 on the tread and 3 on the floor. One running segment is usually sprints and the last is usually a really intense hill run.
I started taking these classes when he released his first ever Sunday live Thunder 45 in September and I was a.b.s.o.l.u.t.e.l.y crushed. Don’t get me wrong, I am still crushed at the end of these workouts, but it’s really awesome to see how much my cardiovascular system has improved over the last 5 months.
I love taking these classes live on Sunday mornings because it’s super motivating knowing you’re working out with a ton of people – this morning’s class having over 500 people there.
So anyways, that was a tangent I hadn’t really prepared to go on but taking into consideration my workouts were a lot harder Friday through today, I'll start my week out a little different . Just because it’s early in the week doesn’t mean I have to go balls to the walls if my body is ready for a recovery day.

As you can see, I am a bit of a creature of habit sometimes and I’ve found a great 5 minute treadmill warmup that I take almost every time I workout. What, it’s a great active stretch!! I don’t always take a cool downs stretch, but I ALWAYS take a few minutes after my workout to really stretch out my legs, calves, back, and shoulders.
For me, this week is week two of Crush Your Core 2 on the Peloton – 4 workouts: 2 five minute workouts and 2 ten minute workouts. I will post before and after pictures for the 4-week program at the end of week 4 and not a day before!
The results would be way more impressive if I didn’t have such a cookie fetish.

Tuesday January 18th - Run & Core Warmup 30 minute run 10 minute Crush Your Core Cooldown
Wednesday January 19th REST DAY – stretching or maybe some yoga
Thursday January 20th – HIIT & Core Warmup walk 5 minute Crush Your Core HIIT Run Cooldown
Friday January 21st – Lower Body & Core Warmup 10 minute Crush Your Core 20 minute lower body strength 10 minute pilates
Saturday January 22nd – Long Run
Warmup walk Run: 30 to 45 minute run (will equate to 2.75 – 4.5 miles)
Sunday January 23rd – Thunder 45 Warmup walk 9am LIVE Thunder 45 – Full Body Strength & Run
Last Week Highlight Reel
Last week went about 30% as expected with covid running through the schools and lots of practices and game cancellations. What did go as expected though was the Coq au vin I made on Tuesday, ate again Wednesday, and then froze the single remaining portion to eat in a couple weeks when it’s freezing and I need a bowl of love. I even created a reel on IG you can watch here.
Sticking with the theme of difficult, my kids are being absolutely impossible to please lately and will not eat anything. Cal, my good eater, picked at his tacos last week and we had to make him even finish one.
I added French onion soup, my homemade chili, lasagna, and a super easy side salad to the blog if you missed those.
Life is just carrying on. It's not always pretty, but in between the picture perfect moments is the time where we learn, grow, and evolve.
